The second release in the Fieldnotes collection is a celebration of the herbs and wildflowers that grow wild and glorious amongst our grains. It’s fresh and floral, with delicate blossom notes and a creamy and citrus-bright finish.
Hazybower was produced at their Oxford Distillery from a combination of heritage varieties of rye, wheat and barley.
The grains were grown as diverse field mixtures, including fields of traditional maslin - where rye and wheat are grown together. The resulting spirit was fermented and distilled with grain in a pot and column still, before it was matured in used American oak and an old Hungarian oak Tokaji wine cask.

Tasting Notes:
Nose: Fresh citrus and blossom with custard and freshly baked scones. Herbaceous notes with hints of green banana and pineapple.
Taste: Lemon tart, cream and nuts with hints of honey and sorrel.
Finish: Fresh peppercorn and ginger with a refreshing spiced finish.
"Hazybower is the second chapter in our Fieldnotes collection - our love letter to the fields that make our whisky. Starting in 2024 with Hedgerow and to be introduced over four years, with each whisky we take inspiration from different elements of our fields. Through each chapter we explore the four distinct flavour pillars of our signature expression, Fielden Rye Whisky.
"This whisky is our expression of the herbs, wildflowers and plant pioneers - you might call them weeds - that grow naturally amongst our grains. These plants bring vibrancy, colour and life to our fields, creating wild and glorious ecosystems that support more than just our grain farming. Whilst most farming aims to minimise any plants but the harvest crop, we celebrate and welcome the diverse life in our fields. White and red clover, poppies, thistles, mayweed and many other plants would have greeted you during a stroll through the fields that made this whisky. With Hazybower we’re bringing a celebration of that diversity and colour to your glass.
"Hazybower was produced at our Oxford Distillery from a combination of heritage varieties of rye, wheat and barley. The grains are naturally diverse, taken from a lineage of grains grown before the advent of agrichemical use and genetic selection for high yielding, uniform crops. There is natural resilience, flavour and beauty in that diversity. The grains were also grown as field mixtures with multiple species growing together, including fields of traditional maslin - where rye and wheat grow together. This approach further boosts diversity in our fields.
"This spirit was fermented and distilled with grain in a pot still and, secondly, in a column, concentrating all the flavour from our fields. It was mostly matured in used American oak
casks, which previously held Fielden whisky. This maturation allowed the grain and spirit character to evolve without much oak character infusion, expressing more of the grain and fermentation profile. The unique addition is the liquid fully matured in an old Hungarian oak Tokaji sweet wine cask. This cask elevated the freshness of the liquid by boosting the citrusy zing, floral honey and ginger character from our rye.
